I got my first solo wedding cake order yesterday. I talk with the bride tomorrow to iron out details!!!

So far, she knows she wants cream, navy blue, and possibly some other color.....and wants to work in a Dallas Cowboys element somewhere for her husband to be. Now how am I going to pull this off all classy like?! Damn I love this job!!!

People have expressed time and time again to me, that when I ask them what flavor of cake they want, or what filling or icing, they can’t think of anything but Chocolate or Vanilla. There are so many lovely amazing cakes aside from these, that I am going to post a menu of sorts, of possible cake flavors and combination of fillings and icings! Read on epicureans! Then feel free to make, and or edit your cake requests! Remember, whilest I am in school, everyone can request a birthday cake for free. However, getting it to you lies the biggest problem. (Really reserved for folks in the central texas area. Sorry guys.

Note: Some cakes have ** behind them. This means that I cannot create a sculpted cake (like the lion, wine cask, or turkey) from this cake due to stability issues. These will just be regular old pretty cakes.

CAKES

The Tried and True – Basic, basic, basic! Good for events with a lot of people, or the finicky palates of yound children.

Chocolate Butter cake – American classic. Pairs well with fruit or crème fillings and any icing or ganache.

White cake – Lovely, slightly almond flavored cake. Any fruit filling brings this alive, and goes well with Buttercream, Cream Cheese icing, or lemon or apricot icing! Get creative!

Yellow Butter Cake – The basic. Buttery and tasty. Pairs well with chocolate frosting or ganache! Or filled with fruits like bananas, or even filled with a cinnamon crème!

“LCD” Lowest Common Denominator cake – Vanilla pound cake – perfect and everyone loves it. Recipe by CakeLove. Excellent soaked in liqueurs or in basic glazes! Yummy!

Angel Food – Light, airy, and conscience friendly. Pears wonderfully with syrups, fresh fruit, and crème!


The Classically Tasteful Cakes – These are like the little black dress of cakes. Classy yet it will make you drool.



Carrot Cake – Spicy, yummy and with pretensions of healthiness. Bits of crunchy walnuts, give it some texture. Topped with Crème cheese icing!

Italian Crème cake - Lovely white cake enhanced by walnuts, coconut and crème cheese icing!

Princess Cake – Lovely and elegant! Sponge cake layers filled with jam (strawberry, raspberry, rose), then topped with pastry crème and covered with a layer of marzipan. (An almond candy similar to fondant)

Spice Cake – Aromatic and wonderful! One whiff or bite and you’ll feel like it’s Christmas. Best soaked with a rum syrup, or simple glaze. But this can be iced if you like!

Cassata – A Sicilian Easter cake! Italian spongecake in thin delicate layers filled with Ricotta and candied cherries. Topped with a cascade of rich velvety ganache. Recipe by Wolfgang Puck’s restaurant Spago.

Tira Misu – An Italian delight. A lovely layered cake consisting of delicate lady fingers soaked in coffee liqueur and rum, a lovely layer of sweet marscapone cheese, and dusted with fine chocolate. A must for any coffee lover. * Not available for sculpted cakes.

Pear Charlotte – Similar in build to the Tira Misu, however this flavor is all about light delicious fruit! Layers of lady fingers flavored with sweet churned cinnamon butter, topped with a layer of spiced sautéed pears, top that with a rich vanilla bean custard, and finished off with a dollop of crème fraiche! Can also be made in apple! ** Not available for sculpted cakes.

Golden Grand Marnier Cake – A sumptious cake overflowing with the flavors of orange, Grand Marnier, chocolate and almond. Moist, with a flavorful crumb! You’ll want more! Recipe from the Cake Bible.


Lemon Chiffon cake – For the tongue with a taste for tart! Light notes of lemon, on lovely airy silky cake!

Scarlet Empress – A unique cake that resembles a pile of roses. Spiral spices of a Raspberry sponge roll form a unique outer shell, while inside is a lovely rich vanilla Bavarian crème! Recipe by the Cake Bible. ** Not available for sculptural cakes.

Red Velvet Cake – Dramatic scarlet crumb, with a light cocoa taste, topped with crème cheese icing!



The Choc-head List – All cakes chocolate in nature!

Black Forest Cake – Luscious layers of chocolate accented with ripe cherries. Tart and indulgent.

German Chocolate – a lighter chocolate cake, not so heavy on the palate with nuts and topped with lovely coconut studded icing.

Roulade Au Chocolat Pour Julia – A chocolate “jelly roll” originally made for Julia Child’s cooking show by the Spago resturaunt. Dusted in powdered sugar, it’s delightful. ** Not available for sculpted cakes.

Chocolate Oblivion Truffle Torte – Layers upon layers of the finest chocolate, silky mousse and pure awesome. Only for the hardcore, devoted choc-fiend. This cake needs no icing. By the Cake Bible. **Not available for sculpted cakes.

Devil’s Food – So chocolately, dense, and flavor packed you feel like you need to go to confession.

The Daring/Playful/Out There Cakes – Go ahead! Try them! You may have a new favorite! Shake off the oppressive chains of cake conformity!

Dirty Hippy Cake – Layers upon layers of swirled color to put you in a Technicolor mood. Tye died vanilla butter cake, tempts tastebuds and puts you in Cake nirvana. Also available in Lemon flavor!

Sassy by CakeLove – A playful pound cake, where the innocent and sweet mango and orange meet the slightest hint of cayenne pepper.

Lemon Ginger Pound cake – Moist and creamy, tangy and exotic, and terribly refreshing! Try it on a hot day! Excellent with crème cheese icing, a basic crème, or a simple sugar glaze!

Chiapas Pound Cake by CakeLove – This cake was apparently inspired by the regional produce from a state in Southwest Mexico. Vanilla, cocoa, honey, cinnamon, cayenne, and almonds conjure images of the ancient Aztecs take on hot cocoa. Try it! Come on, I dare you.

Mojito Pound Cake by CakeLove – The flavors of the classic Cuban cocktail in cake form!

Pumpkin Clove Pound Cake by CakeLove – The faintest whiff of this will have you in a Thanksgiving mood. If you love pumpkin as much as I do, I highly recommend this cake.

Rum Runner Cake by CakeLove - 9 out of 10 pirates agree this cake will rock your socks and knock you off your peg leg.

Manly Man Cake – (aka Stout Pound Cake ala CakeLove) A cake made with dark delicious stout. You need not risk your intense manfactor by being seen partaking of this treat.

Mr. Banana Legs –(Yet another CakeLove recipe) The perfect banana cake. Can be served with layers filled with fresh bananas and chocolate, and topped with crème! Get creative, this could taste great with anything. No, I do not understand while he is called Mr. Banana Legs. Just go with it, smile, nod, eat.

Tres Leches Butter Cake – Spanish for Three Milks. Sweet, sticky, heaven. Carmalized perfection dancing with crème and cake!

THE ICINGS – What’s a cake without this? All icings can also be used as fillings. :) DUAL ACTION.

Lex’s Buttercream – The standard in tasty cake toppings. The basic formula is vanilla with a hint of almond, smooth and buttery, compliments almost any cake! However, this icing can be customized with any flavor you can think of! Let your imagination run wild!!! (Lemon, Raspberry, Orange, Rum, Maple, Snozzberry, mocha, apricot, YOU NAME IT!)

Cream Cheese Icing – Does this need a paragraph to describe it’s awesome?

Chocolate icing – Ditto, yo.

Chocolate Ganache – Creamy, smooth chocolate decadence with a glitteringly perfect appearance.

Flame by CakeLove – A buttercream for the daring! Cinnamon, cocoa, and the secret ingredient……essence of Ancho chile!

Whipped Crème – A laid back, innocent cake topping. Delicate and allows cake flavors to take center stage. Can be made with added flavors of cinnamon or honey!

Marshmallow Fondant – Makes any sculptural cake a pure marvel. Essentially a vanilla edible playdough, gives a perfect, smooth texture to any cake, and helps preserve the moistness of the cake! Flavor is a mild vanilla so it doesn’t steal the show, but adds to appearance mostly. Must be paired with an Icing so that it will adhere to cake. I recommend a buttercream as an ideal partner.

Marzipan – Delicious almond genius. In essence like fondant, but made entirely of almonds.


THE MIDDLE – Cake fillings add a whole other dimension of flavor to a dessert. The possibities and combinations are endless! Keep in mind that the previous icings can also be used as fillings. Heck you can layer several icings and fillings between each layer. GO NUTS.

Fruit Preserves – You pick that fruit that screams you, and let’s smash it between some cake.

Lemon Curd – Unappatizing name, fantastic taste! Creaaaaaaamy lemony goodness. My favorite cake filling.

The Basic Vanilla Crème – Sometimes when people are boring we call them Vanilla. What a terribly slanderous thing to say about this delightful spice. Simple, pure, and always good.

Fresh fruit – You really can’t go wrong here. Though technically tomato is a fruit, and that’d be pretty stinking disgusting. So……anything but tomato, really.

Well I'm Back!

And Japan was awesome, but it's good to back in the USA. I'm living in the BEEEG city now, and about to start culinary school to become a pastry chef. So there will be a lot more edible type submissions on this page from now on.

Also, I'm going to try push to actually start rocking on the ground work of my comic. I know I've been saying it for years, but I think in this stage in my life, I want to feel like I'm creating something worthwhile, so I'm going to go for it.

Oh, and, totally, I'm open to requests. :) I need to get back into MAH ART GROOVE.
